Massy Group along with participating brands Massy Stores and Shell Lubricants, have confirmed that they will be the title sponsor for the inaugural Women\u2019s Caribbean Premier League (WCPL) which gets underway on 31 August in St Kitts.<\/p>\n

The Massy Women\u2019s Caribbean Premier League (WCPL) will feature three teams, the Barbados Royals, Guyana Amazon Warriors and the Trinbago Knight Riders. The teams will play each other in four exciting Twenty20 matches at Warner Park, one of the fastest scoring grounds in world cricket. The teams will be captained by Hayley Matthews (Barbados Royals), Stafanie Taylor (Guyana Amazon Warriors) and Deandra Dottin (Trinbago Knight Riders).<\/p>\n

Each of the three Massy WCPL teams will have the best players from the region as well as exciting overseas players to round out their squads as women\u2019s cricket is given huge exposure across the Caribbean and around the world.<\/p>\n

ABOUT THE HERO CARIBBEAN PREMIER LEAGUE:

First started in 2013, the Hero Caribbean Premier League (CPL) is a franchise-based T20 format cricket tournament that combines two of the most compelling aspects of Caribbean life \u2013 dramatic cricket and a vibrant Carnival atmosphere. The broadcast and digital viewership has passed 500 million in both 2020 and in 2021 to make it one of the most watched leagues in world cricket. St Kitts & Nevis Patriots are the current Hero CPL champions and the other competing teams are Barbados Royals, Guyana Amazon Warriors, Jamaica Tallawahs, Saint Lucia Kings and Trinbago Knight Riders.<\/p>\n

Chocolate Hot Cross Buns<\/strong><\/em><\/p>\n

Ingredients<\/strong><\/p>\n

1 cup butter<\/li>\n
1 cup sugar<\/li>\n
2 tsp salt<\/li>\n
4 tbsp cocoa powder (we used local, sun eaters)<\/li>\n
3 eggs<\/li>\n
6 cups flour<\/li>\n
6 tbsp cornstarch<\/li>\n
4 tsp yeast<\/li>\n
1 1\/2 cups milk<\/li>\n
6 tsp cocoa powder<\/li>\n
1\/4 cup nibs<\/li>\n

1\/4 cup chopped chocolate (we used 70% local dark)<\/li>\n<\/ol>\n
Method<\/strong><\/p>\n
\n
Cream butter and sugar until butter is light in colour and then beat eggs in one at a time.<\/li>\n
Add in cocoa powder and salt and mix until combined.<\/li>\n
Measure all dry ingredients into a large bowl and mix (add yeast away from salt or mix salt into dry ingredients first before adding yeast since salt will kill the yeast)<\/li>\n
Add dry and wet ingredients into the creamed butter mixture, starting with the flour and alternating between the two.<\/li>\n
The mixture will form a soft dough that is still a little sticky, cover the dough and leave to proof until it has doubled in size.<\/li>\n
When it has doubled add in the nibs and chocolate (we chose these mix in but you can use whatever you would like!)<\/li>\n
Leave the dough to proof again for 15 minutes before using.<\/li>\n
Portion the dough into 100g pieces and roll into balls. place them in a greased pan and cover them, allowing them to proof until almost doubled.<\/li>\n
Brush with egg wash or milk wash and bake at 400 degrees F for about 15-20 minutes.<\/li>\n
remove from the heat and allow to cool before filling etc.<\/li>\n<\/ol>\n
Orange Mint Pastry Cream<\/strong><\/em><\/p>\n
Ingredients<\/strong><\/p>\n
\n
2 cups milk<\/li>\n
1\/4 cup corn starch<\/li>\n
1\/2 cup sugar (divided into two parts)<\/li>\n
2 egg yolks<\/li>\n
1 whole egg<\/li>\n
1 tsp vanilla<\/li>\n
1 tbsp butter<\/li>\n
one orange zested or some orange peels<\/li>\n
one spring of mint<\/li>\n<\/ol>\n
Method<\/strong><\/p>\n
\n
Place milk in a pot to boil with orange, mint and half the sugar (watch this carefully since it can easily over boil)<\/li>\n
In a separate bowl combine eggs, sugar, cornstarch, whisk together until it forms a smooth paste.<\/li>\n
When the milk reaches a boil, slowly temper into the egg mixture. Add the mixture back to the pot and return it to the stove on very low heat<\/li>\n
Stir the mixture constantly until thickened.<\/li>\n
add in vanilla and butter.<\/li>\n
Transfer to a bowl and cover with cling film, ensure the film is touching the pastry cream on all exposed areas to prevent the cream from forming a skin.<\/li>\n
Cool completely before using<\/li>\n<\/ol>\n
Chocolate icing for the cross<\/strong><\/em><\/p>\n
Ingredients<\/strong><\/p>\n

1\/4 cup cocoa powder<\/li>\n
1\/2 cup icing sugar<\/li>\n
hot water<\/li>\n<\/ol>\n
Method<\/strong><\/p>\n
\n
Mix the dry ingredient into a bowl.<\/li>\n
Add in a little hot water at a time (maybe use a teaspoon to avoid over pouring)<\/li>\n
Mix together until a thick paste is made.<\/li>\n
Transfer to a piping bag and use to pipe crosses onto the buns, this mixture is best used when it is still warm.<\/li>\n<\/ol>\n

8 oz. penne Pasta<\/li>\n
2 boneless, chicken breasts<\/li>\n
4 cloves of garlic, minced<\/li>\n
1 tsp crushed red pepper<\/li>\n

\u00bd cup Castillo San Simon Chardonnay<\/li>\n
1 cup Cherry Tomatoes<\/li>\n
\u00bd cup grated Parmesan Cheese<\/li>\n
\u00bd tsp ground pepper<\/li>\n
1 tsp Kosher Salt<\/li>\n
2 tbsp. half and half<\/li>\n
2 tbsp. Olive Oil<\/li>\n
Salt and Ground Pepper for sprinkling on the Chicken<\/li>\n
Fresh parsley for garnish<\/li>\n<\/ul>\n
Instructions<\/strong><\/p>\n

Bring water to a boil in a large, deep skillet. Cook the pasta until tender. Drain and set aside.<\/li>\n
While the pasta is cooking, place the tomatoes in a small oven-safe boil. Drizzle with 1 tbsp. olive oil. Broil on high for about 5 minutes or until slightly charred. Remove from the oven and set aside.<\/li>\n
Prep the chicken. Pound with the flat side of a mallet. Sprinkle with salt and pepper. Once the pasta is done cooking and has been set aside, heat the skillet over medium heat. Add the remaining olive oil and the chicken. Cook the chicken for 8-12 minutes or until 165 degrees, flipping a few times while cooking. Once done cooking, remove from the pan and place on a cutting board. Cut into chunks.<\/li>\n
Return the skillet to the stove and melt the 1\/4 butter over medium low heat. Add the shallots, garlic and red pepper flakes. Sautee for 2 minutes, scraping the bits from the chicken from the bottom of the pan. Add the Chardonnay, salt and pepper. Cook for 5 minutes or until slightly reduced. Stir in the half and half, parmesan cheese and chicken. Then carefully stir in the roasted tomatoes.<\/li>\n
Garnish with fresh chopped parsley and more parmesan cheese, if desired<\/li>\n<\/ol>\n

1-2 tbsp butter<\/li>\n
\u00bd red onion (chopped)<\/li>\n
1 clove garlic<\/li>\n
Dash of Rosemary<\/li>\n
Dash of Thyme<\/li>\n
1 tbsp Flour<\/li>\n
\u00be cup Castillo San Simon Sweet Red Wine<\/li>\n
\u00bd Cup shredded Gruyere Cheese<\/li>\n<\/ul>\n
Instructions<\/strong><\/p>\n

In a pan on medium heat, melt butter.<\/li>\n
Add onion, mixing into butter.<\/li>\n
Once the onions begin t0 soften, add garlic, thyme and rosemary.<\/li>\n
\u00a0Sautee for a couple of minutes.<\/li>\n
Sprinkle about a tbsp. of flour, mixing in.<\/li>\n
Once mixed in, add wine.<\/li>\n
\u00a0Reduce until alcohol has burned off and the reduction is thick enough to coat a spoon. Taste reduction to ensure alcohol has burned off.<\/li>\n
Spread reduction on each slice of bread.<\/li>\n
Add Gruyere.<\/li>\n
Butter the outside of each slice.<\/li>\n
Grill in a pan on medium heat until golden brown on each side.

Preheat oven to 350\u00b0F. Grease a large bundt pan and set aside.<\/li>\n
In a large bowl, whip butter, and both sugars on high for 2 minutes. Add in eggs one at a time, mixing in between each addition. Add in vanilla extract<\/li>\n
Sift together flour, cocoa powder, baking powder, baking soda, and salt. Carefully incorporate half into the wet ingredients, then add in the yogurt and pinot noir, mixing slightly. Last, add the rest of the dry ingredients.<\/li>\n
\u00a0Pour into prepared bundt pan and bake for 40 minutes, or until a knife inserted in the center of the cake comes out clean. Allow to cool slightly before inverting and topping with red wine chocolate ganache.<\/li>\n
To make the ganache, heat chocolate over a double boiler on low heat. Once fully melted, whisk in 1\/3 cup red wine. Mixture may congeal slightly\u2013 if it does, add in a tablespoon more of wine. Pour over cake.<\/li>\n<\/ol>\n

Cool and mix in the ros\u00e9, then freeze in a loaf pan, breaking up occasionally until frozen solid.<\/li>\n
Process in batches in a food processor until smooth, then freeze again until firm.<\/li>\n
Scoop into coupe glasses and top off with prosecco.<\/li>\n
Garnish with rosemary and serve.<\/li>\n<\/ol>\n

1 red bell pepper, diced (about 1 cup diced red bell pepper)<\/li>\n
1 clove garlic, minced<\/li>\n
1 can (28oz) crushed tomatoes<\/li>\n
1\/2 cup Waitrose Italian Red wine<\/li>\n
1 cup reduced sodium chicken broth<\/li>\n
1 teaspoon dried oregano<\/li>\n

In a large, deep pot, heat olive oil over medium-high heat. Add Italian sausage, onion, bell pepper and cook, breaking up sausage, until onions are translucent and sausage is cooked through. Add garlic and cook for one minute or until fragrant.<\/li>\n
Add crushed tomatoes, wine, chicken broth, and oregano. Increase heat to high and bring to a boil.<\/li>\n
Reduce heat to a high simmer (medium\/medium-low) and add pasta. Stir to combine and push pasta down into sauce, Cover and cook for 15 minutes, stirring frequently, or until pasta is al dente.<\/li>\n
Reduce heat to low and add cream cheese. Stir until cream cheese is melted and combined. Serve topped with fresh parsley or basil, if desired.<\/li>\n<\/ol>\n
